It’s summer grill season! Optometrist Dr. Matt Morris from Edmond Family Eye Care shares his favorite recipe for grill season – salt steak for our Yay Eats series, What’s Cookin’ Good Lookin’ featuring favorite recipes from our small business MVPS here at Yay Dude.

Salt Steak

INGREDIENTS:

  • Sirloin Steak (1 1/2 – 2 in thick)
  • Dijon Mustard
  • Whole black pepper corns
  • Ice cream salt (rock salt)
  • Worcestershire sauce

STEPS:

  • Layer on dijon mustard to steak (like icing on a cake)
  • Layer on whole black pepper corns & press down
  • Layer on ice cream salt & press down
  • Coat with Worcestershire
  • Wrap steak in newspaper (thick newspaper is best)
  • Tie with butcher twine
  • Dump newspaper covered steak in a bucket of water for 5 seconds
  • Then, place newspaper covered steak directly onto coals in grill
  • Let sit for 15-20 seconds a side
  • Remove steak & take off/ scrape all toppings
  • Place steak back on grill & sear each side for 3-4 minutes each side
  • Enjoy!
