It’s summer grill season! Optometrist Dr. Matt Morris from Edmond Family Eye Care shares his favorite recipe for grill season – salt steak for our Yay Eats series, What’s Cookin’ Good Lookin’ featuring favorite recipes from our small business MVPS here at Yay Dude.
Salt Steak
INGREDIENTS:
- Sirloin Steak (1 1/2 – 2 in thick)
- Dijon Mustard
- Whole black pepper corns
- Ice cream salt (rock salt)
- Worcestershire sauce
STEPS:
- Layer on dijon mustard to steak (like icing on a cake)
- Layer on whole black pepper corns & press down
- Layer on ice cream salt & press down
- Coat with Worcestershire
- Wrap steak in newspaper (thick newspaper is best)
- Tie with butcher twine
- Dump newspaper covered steak in a bucket of water for 5 seconds
- Then, place newspaper covered steak directly onto coals in grill
- Let sit for 15-20 seconds a side
- Remove steak & take off/ scrape all toppings
- Place steak back on grill & sear each side for 3-4 minutes each side
- Enjoy!
